I was at the produce store the other night and as I was wandering through the veggie and fruit aisles, these giant portobella mushrooms caught my eye. They were perfectly shaped and about the same size as a normal hamburger bun. To be honest, if you squint at them they actually look like hamburger buns. I had been craving burgers and was hoping to grill some soon with the warmer weather.
I stood there holding the package and wondered if I could put a twist on the traditional burger using these beautiful portobella mushrooms. Why not?
So in today’s posting, I present to you my latest creation — a Portobella and Blue Cheese, Bacon Burger with Mashed Cauliflower. For all of you watching those carbs but wanting a burger and mashed potatoes, this is even better! The cauliflower is so simple to make — just cut it up, boil it until fork-tender, and after you’ve drained the water, splash some cream and/or butter while mashing with a fork to the desired consistency. It’s that easy!
This burger is jammed packed with flavor with the crumbled blue cheese and the crisp slices of bacon. I even flavored the burger with chopped parsley from my herb garden and a few dashes of soy sauce.
The bacon was cooked right on the grill using some aluminum foil and I simply brushed the portobella mushrooms on each side with some olive oil before placing on the grill and cooking for 4-5 minutes on each side to soften.
I’ll be the first to tell you that each bite of this burger is extremely juicy from the portobellas so be sure to have that napkin ready.
