There’s something about summer that just takes me in a million directions and alters the course of my everyday cooking.
As you’ve read in prior postings, I’ve been totally obsessed with gardening and trying to work on my green thumb, or lack of it. I’ve also been in the vacation mindset trying to figure out where to go next. This boy needs to get out of town and explore! I’m constantly on travel sites and trying to get inspiration for the next big adventure — but those darn airfares are a killer this time of year!
I’ve been hooked on a little country song and have been belting it out every chance I can.
And as for my other distraction, I’m a little hesitant to admit it but since this is a safe zone — please promise not to laugh — I’ve gotten hooked on a little country song and have been belting it out every chance I can get. Do I look like a country boy?
But on one recent evening, I sat down to dinner and turned on the TV and there was this televised country concert — the CMAs I think and then this song came on. I was hooked! Fast forward to YouTube and watching the video over and over again, then downloading the song on iTunes (the karaoke version) and then recording it with the help of someone who indulges my fantasy to be a singer, I now have my own country song. I’ve also been asked to do a video for it but that will never happen!
So in the meantime, here is the real song that I’ve been belting out non-stop. Do any of you know it? Are you a fan of Hunter Hayes? I’ve never heard of him until this song popped up on the TV screen but it’s really catchy!
So now you know what I’ve been up to. But despite all the distractions, I still have to eat.
One of my latest creations was a result of some beautiful avocados I found at the store the other day. I was planning on turning them into guacamole and serving it with chips but on the night that I grabbed them and started to slice them in half, I had another idea come to mind — why not use it in a salad and combine it with salmon? It’s super easy and super delicious and refreshingly perfect for a beautiful summer evening.
- Squeeze one lime over both sides of a pound of salmon
- Dust both sides with a Chipotle Seasoning of your choice
- Fry salmon in a thin layer of olive oil in a pan over medium heat and continue cooking until golden brown on both sides and cooked through
